Summer Fun with Green Smoothies

My grand kids enjoy Popsicles. Why not make them healthy. Here are a few recipes they like.

Healthy Tropical Fruit Popsicles
  • 3 small mango's
  • 1 cup of pineapple
  • 1 banana
  • 1 cup of coconut milk
  • juice and pulp from 1 lime
  • 2 tablespoons of unsweetened shredded coconut
  • honey (optional)
  • add a drop of  doTerra Lemon essential oil if desired.
Hand juice a lime and add both the juice and pulp to a food processor or blender with the rest of the ingredients except the coconut.   Blend until smooth.  Add the shredded coconut and pulse just long enough to mix it in.  Taste your mixture and add a small amount of honey if desired. Pour into molds and freeze for several hours.
Enjoy!
